Turkey Meatballs + Stir Fry + Quinoa
Mixed things up a tad bit this afternoon with trying my hand at lean turkey meatballs for the first time!
Step 1:
Stir fry veggies of your choice (I used zucchini, bell peppers, broccoli, and onion)
Step 2:
Fry onions until lightly browned + mix with 1 lb of lean ground turkey, 1/3 C bread crumbs, 1 egg, 1/2 T garlic, 2 tsp. oregano. Mix together in bowl, roll into 1.5 in. balls + bake for 20 minutes at 425 F.
Step 3:
Make quinoa of your choice.

Mix together and wah-la! Enjoy! And make sure to make a lot so you can refrigerate + eat throughout the week :)
